For supper tonight, I decided to give Sweet Potato French Fries a try as a side along with our sausages. A few weeks ago, I saw this lonely sweet potato in our drawer, and decided to chop it up and throw it in with the roast chicken. Delish! It had been awhile since I had sweet potato – I forgot how they can take on such a sweet dimension. And, these fries proved likewise. I felt like I was eating maple sugar! Maybe they should be had for dessert instead of a main.
Little T didn’t quite share my enthusiasm – he had only a few of them before refusing another bite. So, I gave him the rest of my sausage which he nibbled along with a bowl of cherry tomatoes while I devoured the fries. The best part? These little bites of heaven are apparently incredibly good for you! Just Google “are sweet potatoes good for you” and you’ll see what I mean (“good” carbs, high in protein, fiber, iron, vitamins, gives you energy, and are even claimed to be the best vegetable to eat).
There are tons of recopies out there, but please don’t add sugar if you decide to make them. Take my word – they are tons sweet on their own, especially if baked. Here is the recipe I used – real simple. Just cut up the sweet potato in pieces that resemble fries, toss with olive oil, and salt and pepper, sprinkle with parmesan cheese and bake.

I love sweet potato fries. I first had them on the waterfront in Halifax a few years ago. Now I make them on a regular basis and feel like we’re having something so much better for us than regular white potato even oven fried. I’m glad you discovered them.
